Ingredients:

2 cl Dry Gin

1.5 cl Lemon Juice

0.5 cl Simple Syrup

10 cl Champagne

1 Lemon Zest or 1 Maraschino Cherry

 

Preparation:

First, prepare the simple syrup well in advance. It's best kept in the fridge for up to a month.

Briefly cook equal volume parts of sugar and water. Let simmer for 3 minutes. After cooling down, strain into an airtight container and store in the fridge.

Start the preparation of the drink with freezing a Champagne flute and freshly squeeze half a lemon to get 1.5 cl fresh lemon juice. Combine gin, lemon juice and simple syrup in an ice filled shaker. Sturdily shake for 20 seconds. Pour the Champagne into the chilled flute and double strain the mixed ingredients carefully on top. Decorate with a lemon zest or a maraschino cherry.

TIP: If you double strain the mixed ingredients into the Champagne flute first and top the drink with Champagne, you'll have to stir very well before serving. If you pour the Champagne first, physics will do the job for you. Don't substitute the Champagne with sparkling wine.
