Fennel Gin Sour

This cocktail needs quite a bit of preparation for the syrup.

Ingredients:

5 cl Gin

2 cl Lemon Juice

2 cl Fennel Syrup

Soda

1 Lemon Wedge

1 Sprig of Fennel Green

 

Preparation:

Prepare the fennel syrup one day in advance. Cut one fennel bulb (around 300 g) in small pieces. Keep the green in an airtight container for decoration. Simmer 500 g cane sugar in 500 ml water until the sugar is completely dissolved. Add the fennel and simmer for 5 more minutes. Let cool down completely and keep for 24 hours at a cool place. Strain the syrup into an airtight bottle and store in the fridge for up to a week.

For the cocktail itself, freshly squeeze one half of a lemon. Add gin, lemon juice, fennel syrup and plenty of ice cubes into a shaker. Shake sturdily for about 20 seconds and double strain into a Cocktail glass with fresh ice cubes. Add a small amount of soda and decorate with a lemon wedge and fennel green.
